Catherine Lee Erickson, 66, Beulah died peacefully in her sleep on Thursday, January 23, 2025. A small family service will be held with burial following. We ask all of Catherine’s friends and co-workers to join us for a celebration of her life at 2:00 PM CT on Saturday, February 1, 2025 at the Zap Community Hall, Zap, ND.
Catherine Lee Erickson (Coleman) was born on September 29, 1958 to Olan and Carolyn at Fort Riley, Kansas. Catherine grew up an Army Brat and lived in numerous locations in the United States and also lived in Germany for a while.
Catherine met her best friend on January 7, 1979 when her daughter Angela was born. Catherine and Angela got plenty of time of it just being them. On November 26, 1990, her son Dan was born. As all who knew her could agree, her grandbabies and great grandbabies were the highlight of her life. When meeting up you could almost guarantee she would share a story and a picture of how they were growing and what they were up to.
Catherine spent most of her adult life in Oregon and Washington working at various restaurants and also managing a few. One day as she was working at the bar, a North Dakota boy walked in and the rest as they say, is history. Catherine traveled with Joe and worked in the warehouse at various jobs. She came back to Beulah with him and started her life here. Joe and Catherine were married on June 29, 2007.
Catherine loved to can and bake and took great pride in her work. At family gatherings she was always in charge of the appetizers because she would come up with the most delicious off the wall recipes.
With Catherine gone, I can now say she was stingy with her recipes. She wouldn’t share her sloppy jo recipe with Lexi until she was married. Her sister in law Angie was denied her candy jalapeno recipe. Her daughter just pointed out that she wouldn’t give out recipes because she always wanted people to come back.
Catherine is survived by her husband, Joe; daughter and son-in-law, Angela and Ramon Preciado, Winters, TX; Son, Daniel Stephens, Vancouver, WA; Son and daughter-in-law, Joseph and Danielle Erickson, Mobridge, SD, Son Levi Erickson, Mankato, MN, and daughter Lexi Erickson St. Paul, MN. Catherine is also survived by her greatest joys, her grandkids, Marcus, Mateo, Ariana, Emma, Adrian, Mystic, Delmar and Kashis, and her great-grandchildren, Liam, Emmit, Kade, Siena and Saint. She is also survived by her mother Carolyn Brown, her brother David Coleman, Lebanon, Oregon, her brothers-in-law and sisters-in-law, Jim and Renee Erickson, Jason and Angie Erickson and Jeni and Doug Moore; and numerous nieces and nephews.
She was preceded in death by her father, Olan; brother, William; parents-in-law, Delmer and Audrey Erickson; brother-in-law, Jeff Erickson; and her precious fur babies, Buck, Cora and Mr. Kitty.
